Health Benefits
Beyond taste, garlic and herbs bring a plethora of health benefits to the table. Garlic is renowned for its antibacterial and antiviral properties, while herbs are packed with antioxidants and essential nutrients. Incorporating them into your diet not only enhances flavor but also boosts your immune system and overall well-being.
Choosing the Right Lamb Chops
Quality Matters
When selecting herb lamb chops, quality is paramount. opt for cuts that are fresh, preferably from grass-fed lambs. Look for meat that is pinkish-red with a fine marbling of fat, ensuring tenderness and flavor.
Cuts and Thickness
Consider the cut and thickness of the lamb chops. Rib chops are prized for their tenderness, while loin chops offer a balance of lean meat and succulent fat. Aim for chops that are at least 1 inch thick, allowing for optimal cooking and juiciness.
Preparing Garlic and Herb Marinade
Ingredients
For the marinade, you’ll need garlic cloves, fresh herbs (such as rosemary and thyme), olive oil, lemon juice, salt, and pepper. Adjust the quantities according to your taste preferences and the number of herb lamb chops you’re preparing.
Marinade Preparation
Start by mincing the garlic and finely chopping the herbs. In a bowl, combine the garlic, herbs, olive oil, lemon juice, salt, and pepper. Mix well to create a fragrant marinade that will infuse the herb lamb chops with flavor.
Marinating the Lamb Chops
Importance of Marinating
Marinating is key to ensuring maximum flavor penetration and tenderness. It allows the garlic and herb marinade to seep into the meat, imparting its aromatic essence and tenderizing the lamb chops for a melt-in-your-mouth experience.
Duration and Techniques
For optimal results, marinate the herb lamb chops for at least 2 hours, or preferably overnight in the refrigerator. This extended marinating time allows the flavors to meld and intensify, resulting in a more flavorful end product. Remember to flip the chops occasionally to ensure even coating.
Cooking Methods
Grilling
Grilling lamb chops over an open flame adds a delightful smokiness to the dish. Preheat your grill to medium-high heat and cook the chops for 3-4 minutes per side for medium-rare, or adjust the cooking time to your desired level of doneness.
Pan-Searing
Pan-searing is perfect for achieving a golden crust on the lamb chops while keeping the interior tender and juicy. Heat a skillet over medium-high heat, add a splash of olive oil, and sear the chops for 2-3 minutes per side until nicely browned.
Oven Roasting
Oven roasting is a foolproof method for cooking herb lamb chops to perfection. Preheat your oven to 400°F (200°C), place the chops on a baking sheet lined with parchment paper, and roast for 15-20 minutes for medium-rare, or until they reach your preferred level of doneness.

For the Sauce:
- 1/2 cup chicken stock, or beef stock
- 2 Tbsp unsalted butter, softened
Instructions
How to Make Lamb Chops with Garlic Butter Sauce:
- Thoroughly pat lamb chops dry with paper towels, wiping away any possible bone fragments or shards. Slice between ribs to separate chops, cutting into 3/4″ or 1″ thick even portions.
- Stir together marinade ingredients in a measuring cup: 5 pressed garlic cloves, 3 Tbsp olive oil, 2 Tbsp parsley, 2 tsp Tabasco, 1 tsp salt, 1 tsp pepper and 1/4 tsp thyme.
- Place lamb chops in a non-reactive casserole dish, pour over the marinade, and rub all sides of lamb chops (focusing on meaty portions) with marinade. Cover and refrigerate for at least 1 hour or overnight.
- Remove lamb chops from the refrigerator 30 minutes before cooking. Place a large heavy pan over high heat and add 1 Tbsp oil. Once the oil is hot, add chops and sear for 2-4 minutes per side, depending on the thickness of chops and desired doneness on a thermometer; keep in mind temp rises 5 degrees as it rests (see notes). Sautee in 2 batches if needed. Transfer to a serving plate, tent with foil, and rest for 5 minutes while making the pan sauce.
To make pan sauce:
- Spoon out excess oil from the pan (leave in 1 to 2 Tbsp oil), being careful not to remove the drippings and flavorings.
- Add 1/2 cup stock and simmer 2 min. Turn off heat then swirl in 2 Tbsp softened butter, 1 tablespoon at a time. Spoon sauce over lamb chops and garnish with more parsley if desired.
